From rosemary to hyssop
The final section is a powerhouse: rosemary and thyme, the aromatic guardians of Mediterranean cooking; sage with its long healing tradition; refreshing lemon balm; and the almost forgotten hyssop that once grew in monastery gardens. Herbs that give every dish and every cup real character.
Robust children of the Mediterranean
Rosemary, thyme and sage come from the sunny slopes of the Mediterranean and are astonishingly undemanding. They like it warm, sunny and rather lean – waterlogging is their only real enemy. In return, many are perennial and will accompany you for years.
Tip for the kitchen
A sprig of rosemary or thyme in the roasting juices, sage leaves tossed in butter for pasta – dried or fresh, these herbs unfold a seasoning that elevates any dish.
