A symbol with history
The Romans already valued the leek, and in Wales the leek stalk is still a national symbol today. Milder than the onion, the leek is one of the most versatile seasoning and vegetable plants of all.
From summer into winter
Depending on the variety, leek is harvested in summer, autumn or – as a robust winter leek – even in frost from the bed. By earthing up, the prized white shaft becomes longer and more tender.
