Star of northern German winter cuisine
Hardly any vegetable is as closely linked to northern Germany as kale. Traditionally it is harvested only after the first frost, because the cold converts starch into sugar and makes it mild and sweet. Whole “kale walks” still celebrate it to this day.
Healthy and robust
Kale is bursting with vitamin C and survives even harsh winters in the bed. Hearty and braised as a classic or modern as a crispy “kale chip” – it has made an astonishing comeback.
