A chameleon in the pot
Red cabbage is a small miracle of chemistry: its pigment reacts to acidity. Add vinegar or apple and it glows red; with baking soda it turns blue – which is why in some regions it is also called “blue cabbage”. The same plant, two names.
Sweet-and-sour and storable
Classically braised with apple, onion and cloves, red cabbage goes with goose and roasts. The firm heads can also be stored excellently through the winter.
