A discovery by accident
We owe chicory to a coincidence: in 19th-century Belgium, forgotten chicory roots sprouted tender, pale shoots in the dark cellar – and chicory was born. To this day the buds are “forced” in the dark so that they stay pale and mild.
In the kitchen
Raw, chicory tastes delicately bitter in a salad; braised or baked au gratin it becomes pleasantly mild and sweetish – a versatile vegetable for the cold season.
