Salad for the autumn
While many lettuces bolt in summer, endive reaches its peak in late summer and autumn. It tolerates light frosts and supplies the garden with fresh greens when other crops have long since been harvested.
Milder thanks to blanching
If you tie the hearts together or cover them, they become paler and lose some of their bitter substances. Raw, braised or as a side dish, endive is a wholesome enrichment.
