Number one before the potato
For centuries the parsnip was Central Europe's most important filling vegetable – until the potato displaced it and it almost fell into oblivion. Today the sweetish, aromatic root is enjoying a well-deserved comeback.
Frost makes it sweet
Parsnips become milder and more aromatic through the cold and can be left in the bed all winter. As a purée, soup or oven vegetable they are a tasty enrichment.
