Aromatic power from the south
Florence fennel is a cultivated form of the old spice fennel and comes from the Mediterranean, where Greeks and Romans already valued it. Its characteristic, slightly sweet aniseed note makes it unmistakable.
Raw and braised
Finely sliced, fennel brings freshness to a salad; braised in the oven it becomes wonderfully mild and sweet. It is best sown in summer for a harvest in autumn.
